Chef Wu

Began his culinary journey as a chef in Beijing, China. With years of cooking experience in Seoul, New York, Seattle, he proudly introduces Korean cuisine to the Portland area. Collaborating with current restaurant management, Wu has deepened his understanding of the local characteristic at KKOKI, a Korean barbecue specialty in Beaverton, and Takumi Sushi and Sake Bar, a Japanese cuisine restaurant in Hillsboro. In the nature-centric and humanistic ethos of Portland, he and his team strive to offer the most refined and environmentally-friendly Korean cuisine to patrons.

The cuisine offered is deeply rooted in Korean tradition but also incorporates influences from Japan, China, and other East Asian regions, blending modern touches into preparation. Fermented foods like kimchi and condiments such as soybean paste and red pepper paste are prominently featured, adding depth of flavor and cultural significance. Rice plays a central role, accompanied by an array of side dishes like kimchi, Namul, Jeon, and Jeot-gal, designed to offer diverse flavors and nutrients in each meal.

Cooking methods rely on distinctive seasonings like Gochujang, soy sauce, garlic, and ginger to enhance taste. While meat is offered, Korean cuisine traditionally uses it sparingly, maintaining a balance with vegetables, grains, and seafood for a comprehensive nutritional profile. Dishes are designed for a harmonious balance of colors, flavors, and textures, promoting a well-rounded intake of nutrients and supporting healthy eating habits. Various cooking techniques such as boiling, steaming, stir-frying, and grilling are employed to enhance flavors and aromas, ensuring an enjoyable dining experience.
